Tuna Calzones.




We're back!!! 
It's been a while but we were both really busy dealing with holidays, summer, sun, sea ... But as you can see this recipe is summer-related. Tuna and vegetables are everything you'll need for the hot days. This Calzone recipe is super easy to make and pretty light despite the pizza crust!


Ingredients:
make 2 calzones

- pizza dough - click here for the recipe-
- 1 can of canned tuna
- 1 leek
-1 bell pepper
- 1 zucchini
-1 tomato
- 1 carrot
- salt, pepper
- powdered garlic
- 1 egg yolk

Directions:

1) Dice 1 leek, 1 bell pepper. Shred 1 carrot and 1 zucchini. Put all these ingredients in a saucepan and add the seasonings -salt, pepper and powdered garlic, you can also add spices or herbs-.
2) Mix the vegetables and cook them over medium heat until all the water evaporates.
3)Preheat oven to 425F.
4) Spread the dough into a circle on a floured surface. On one half of the circle, add the vegetables, the tuna and sprinkle one half of a diced tomato.
5) Cover the filling with the other half of the crust and seal the edges together. Brush the calzone with an egg yolk and put it in a 400 degrees oven for 20-30 minutes.

4 Hand-Cooking : Bell Peppers, Feta and Zucchini Pizza.


Pizza Part 2.
Last month we had our Pizza Day, it was our first attempt at making homemade pizza and it all turned out pretty delicious. The first pizza we've cooked was a coppa, aragula and goat cheese pizza. 
For the second one (yes we had two pizzas in one day! So what?!) we wanted -needed- something "sunny" that could remind us of holiday and summer! So we came out with this mediterranean-like pizza with bell peppers, lots of olive oil and other yummy things.



Ingredients :

For the dough

For the topping
- 1 red bell pepper
- 1 yellow bell pepper
- 1/2 zucchini
- Feta cheese (as much as you want)
- 2 tbspoon olive oil
- Basil leaves
- A pinch of Espelette Pepper
- A pinch of Salt
- Tomato Sauce (we've used garlic and dried tomato sauce)

Directions :
1) Cut 1 red bell pepper,1 yellow bell pepper and 1/2 zucchini.
2) In a frying pan pour 2 tbspoon olive oil and add the vegetables, salt and Espelette pepper.
3) Cook for 10 minutes.
4) Spread the -dried- tomato sauce on the dough and add the vegetables and Feta cheese on top.
5) Cook for about 30 minutes until the dough is golden.
6) Add fresh basil leaves on top.

4 Hand Cooking: Coppa, Arugula, and Goat Cheese Pizza.



We're finally back! Sorry for the unexcused absence but we were busy working and passing exams.  But fortunately, the winter holidays have finally come and that means we have time to cook -and enjoy Christmas food yeahh. We've decided to cook something new for us: pizza. So here is a simple, quick, and tasty recipe what will cheer you up and help you face the chilly winter days. 
PS: we've made a surprising -but yet agreable- discovery with this pizza: the combination of the baked coppa with the caramelized tastes like roasted duck !





Ingredients:
for the pizza dough
- 450g all-purpose flour
- 1/2 tp sugar
- 1/2 tp salt
- 300ml warm water
- 1 tp baking powder
- 2 tb olive oil + 1 tp for the mould

for the topping
- 5  coppa ham slices
- 2 handful arugula
- 1 onion
- 1/2 tsp sugar
- 1 tb red wine vinegar
- 1 tb olive oil
- 50 g goat cheese
- 2 tb tomato sauce (we've used a can of garlic and tomato sauce)
-1 tb grated parmesan cheese


Instructions:
- We've made the dough thanks to a bread making machine but your pizza dough recipe will make it perfectly.
Preheat the oven 240°C
1) Caramelize the onion: cut it into thin slices. In a frying pan, put the onion slices with  1 tbsp olive oil, 1/2 tsp sugar and 1 tbsp red wine vinegar. Caramelize for 5 min until brown. Remove from heat.
2) Spread the pizza dough in a mould or on parchment paper.
3) Spread the tomato sauce on it. Then add the caramelized onion, a handful arugula, the coppa slices and finish by the goat cheese. Drizzle olive oil.
4) Cook for about 30min until the dough is golden. Remove from heat. Add the parmesan cheese and another handful of arugula.
