Moroccan lamb burgers with caramelized onion and raisin sauce.





B's birthday was 10 months ago and even if I baked her a birthday cake, I've failed to make her our traditional birthday-burger -shame on me- but BUT better late than never! so HAPPY LATE BIRTHDAY!!! Since B loves to share my addictions with people I've thought I'd pay her back  -It wouldn't be fair to me if I appeared as the only greedy one-
So out of B's loonggg, veryy looonnng, (so long that it would take me months to tell you the whole list) list of addictions, there is LAMB. Yep she loves lamb, she adores lamb, and if you ask me I find it pretty cruel knowing that lambs are baby sheeps... but since this recipe was for her birthday and since I don't mean to highlight the violent and cruel aspects of B's troubled personality -and of course I'm kidding- I'll just end this by saying that this is not a vegan blog anyway and that these "lamburgers" were DELICIOUS. 
Hopefully she'll get another burger in two months, or maybe six, or nine...


Ingredients:
Makes 2 burgers

- 200g (ground) lamb
- 1 egg
- 1 onion
-30g raisins
- parsley
-cilantro,cumin,paprika (I used a mix of Moroccan spices containing those three)
- mint
- salt, pepper
- olive oil
-vinegar
-1/2 cucumber

Directions:

1) Grind 200g lamb in a food processor. In a large bowl, mix the ground lamb with 1 egg, parsley, cilantro, mint, salt and pepper.
2) Divide the lamb into 2 portions and form two patties and let rest in the fridge.
3) Heat 1tbsp olive oil in a saucepan over medium heat. Add 1 chopped onion and 1 tbsp vinegar. Let cook until the onions are caramelized and add salt, pepper, cilantro, cumin, paprika and 30g raisins.
4) Pour about 2 tbsp olive oil in a frying pan, when the oil is hot, cook the patties until done.
5) Serve on buns and top with 1/2 sliced cucumber and the caramelized onion and raisin sauce.

Guacamole and Raw Salmon Burger.


As you may know, Kama and I have a sort of tradition: making burgers for our birthdays. This year we delayed Kama's birthday lunch and eventually celebrated it nearly two months afterwards. But still it was great. I've decided to change our habits and replaced the steak by a salmon tartare and not to add cheese. The result was very fresh and agreeable.




Ingredients:

for 2 servings


- 300g fresh salmon
- half a lime
- chopped dill
- pepper

- 1 1/2 ripe avocado
- half a lime
- chopped chives
- salt and pepper

- 1 big onion

- tabasco

- 2 buns

+ - how to make home made French Fries


1) Dice the salmon. Incorporate the lime juice, dill and season with pepper. Refrigerate the tartare.
2) Puree the avocado. Incorporate tthe lime juice, chives and season. Refrigerate the guacamole.
3) Slice the onion. Fry in boiling oil until the rings are golden brown and crispy.
4) Heat the buns in the oven.
5) Dress the burgers, season with tabasco if needed, and serve immediately with the French Fries. Don't wait too long, otherwise the salmon will cook in the hot bun.

Pork and Spinach Hamburgers with French Fries.


Today, we've finally celebrated Kama's B Day after a month late (okay, a month and ten days late ...) Anyway, I've already made burgers last year but we love hamburgers so much that I could'nt help myself making hamburgers again. Why not making this a birthday habit ?!
This time however, I wanted to try something new, that's why I've made ... Asian style burgers with pork marinated with typically asian ingredients. Let's be honest, I didn't make the buns but I did make the French Fries. And I found a great recipe in a potato recipes book so that the French Fries aren't sticky and too moist.


Ingredients:


for the 3 pork burgers

- 5 pork chops

- 1 egg white

- 1 bird-eye chili

- cilantro

- chopped red bell pepper

- 1 tspoon ground ginger

- 1 tspoon ground garlic

- 2 tbspoons soya sauce

- pepper and salt

- flour

- cheddar

- spinach leaves

- spring onions

- 3 whole-wheat flour

- ketchup


for the French Fries

- potatoes

- vegetable oil


Directions:


1) Mix the ingredients for the pork burgers (except the flour) altogether; Shape the burgers and fridge them for an hour; Flour the burgers before frying them with sesame oil

2) Assemble the hamburgers with the rest of the ingredients and put in the oven for the cheddar to melt.


How to make French Fries:

1) Cut the potatoes - the bigger the French Fries are, the tastier they will be;

2) Soak them for 30min; Strain and wipe them;

3) Fry them a first time in hot oil for 3min; Remove them for 5min and fry them a second time until they've browned;

4) Salt and serve immediately with the hamburgers.
