Sweet pea risotto with fried shrimps.



It's the first time I've made a risotto. My boyfriend cooked an asparagus risotto last summer and I just fell in love with risotto. So here is my first try; pretty tasty.

Ingredients for two people:
- 100g rice (arborio)
- olive oil
- 1 onion
- 1 bouillon cub melt in 1 quart water
- peas
- grated parmesan cheese
- parsley
- 8 shrimps
- lime juice
- garlic

Directions:
1) In a pan, fry the fine-cut onion (it must not become golden), then add the rice
2) Once the rice is translucent, add a little of broth
From this moment until the end, you'll have to stir the rice very often
3) When the broth evaporated, add some more, repeat the operation until there's no broth
4) When the rice is almost done (15-18min), add the peas
5) When it's cooked, add the parmesan cheese, stir the mixture and cover for about 1-2min
6) In another pan, fry the shrimps with a tbspoon of olive oil & garlic, add pepper and sprinkle with lemon
7) Serve with chopped parsley and shrimps on top. Enjoy.
